Pumpkin a la Vodka
Ingredients:
- 1/4 C. Vodka 
- 1 tsp. Nutmeg 
- 1 pkg. Pasta 
- 1 C. Pumpkin Purée 
- 2 Tbsp. Olive Oil 
- 1 Garlic Clove, minced 
- 1/2 tsp. Chili Flakes 
- 1 Cup Heavy Cream 
- 1 Cup Parmesan Cheese, grated 
- 2 Tbsp. Tomato Paste 
- 1 White Onion, diced 
- Pancetta, diced 
- Salt and Pepper 
Directions:
- Add olive oil to a skillet on medium high heat. 
- Add your diced onion & pancetta. Cook until onion is translucent. 
- In a separate pot boil your noodles in water that has been salted. 
- Add red pepper flakes and garlic to the diced onion and stir. 
- Add the tomato paste & vodka to the skillet. Mix well and let cook 1-2 minutes on medium heat. 
- Add pumpkin to the sauce and stir. 
- Add cream and a pinch of salt, pepper, and nutmeg. Stir to incorporate. 
- Add your Al dente noodles to the sauce and stir gently. 
- If the sauce is too thick add pasta water to get to desired consistency. 
- Remove skillet from heat, plate. Top noodles with fresh Parmesan. Add salt and pepper if needed. Enjoy!
